Starters 
 
Barley soup with vegetables and coffee
Ingredients for 4 serves:  200 g pearl barley, 100 g carrots, 100 g celery, 100 g fresh pinto beans, 200 g fresh green peas, 150 g ham, 2 middle sized potatoes, 1 onion, 1 clove of garlic, 3 spoons of olive oil, 20 g butter, 1 cup of extra strong espresso coffee, clear broth to keep dense the soup.
Brown the onion in thin slices in a saucepan with oil, butter, the clove of garlic, celery and carrots cut into cubes, pinto beans and green peas.  
Flavour and then add coffee and the ham cut into cubes. Cook for a couple of minutes and then add barley and the two potatoes. Add some clear broth and boil. Go on until the complete cooking of barley and potatoes. Add clear broth if necessary. At the end of cooking, mash up the potatoes, mix the soup and serve hot. If you want, you can add a spoon of olive oil on the course.   
 
Spaghetti with coffee
Ingredients for 6 serves:  400 g spaghetti, 200 g ham, 1 carrot, 1 green onion, 60 g butter, ½  glass of red wine, ½ glass of  weak black coffee, 4 spoons of grated cheese, salt pepper, 1 celery.
Fry lightly carrot, celery and green onion into butter. Add ham cut into cubes and flavour for 15 minutes, spill the wine and make it boil off.  Salt, pepper and spill the coffee. Cook for further 5 minutes.
Cook spaghetti just slightly firm and add the coffee, then dress with the coffee sauce and the grated cheese.

Veal with coffee
Ingredients for 4 serves: 500 g veal, 70 g butter, 100 g pine nuts, 100 g almonds, 2 glasses of clear broth, 1 cup of coffee, 2 spoons of olive oil, salt.
Melt one third of the butter in a small nonstick baking tin, cook for a few minutes the pine nuts and the almonds cut into pieces. Brown in a saucepan the veal with the remaining butter and oil.
When browned, add nuts and spill the coffee. Cook in hot oven at 180° for 1 hour and a half and add clear broth.  

Roast pork with coffee sauce
Ingredients for 4 serves: 1 spoon of lemon juice, 1 spoon of sugar, 1/3 of butter, 2 or 3 cups of coffee, 2 teaspoon of English sauce, 1 spoon of mustard, pork.
Put the extra-strong espresso coffee in a casserole with butter, the English sauce, the mustard, lemon juice and sugar.
Mix and heat until the butter is melt. Use a part of the sauce to brush the roast pork during the cooking time and use the remaining sauce to dress the slices of meat.

Ham with coffee sauce
Ingredients for 4 serves: 40 g flour, 40 g butter, 50 cl milk, a pinch of salt, a pinch of sugar, 25 g mustard, 2 spoons of extra-strong espresso coffee, 750 g  Parma ham, 6 boiled eggs.
Mix 40 g of flour, 40 gr of butter and 50 cl of milk, add a pinch of salt and one of sugar, 25 g of mustard and the 2 spoons of extra-strong espresso coffee.
Then spill the sauce in a saucepan, where there are 750 g of Parma ham cut into small cubes and 6 boiled eggs cut into slices.
Keep the casserole in a double saucepan before serving.

Ethiopia Omelet
Ingredients for a single serve: 2 eggs, 1 slice of fondant cheese, lyophilized coffee, ½ cup of milk, salt, pepper, nutmeg, oil to fry.
Whisk eggs with the coffee melt into the milk and the spices; cook. Once the omelet is ready, put on it the cheese and refold.
