... to “kill” the flavor, meaning to replace or eliminate it.
The coffee chaser is a popular assimilation of a custom born in the aristocratic classes, where it was commonly served at the end of the meal to the men, who rose and moved to another room to smoke and drink cognac or brandy.
Today it is still served at table, and even at lunch. A bitter liqueur and a local favorite liqueur are generally offered.
